In a small pot, combine soy sauce, mirin, sake, and sugar. Bring it to a boil, then reduce heat and simmer for 5 minutes until slightly thickened.
Thread the chicken pieces onto the soaked bamboo skewers, alternating with green onion pieces.
Heat a non-stick pan or induction pan over medium-high heat. Add a little oil and sear the skewers, turning occasionally, for about 5-7 minutes.
Once the chicken is nearly cooked through, brush the skewers with the sauce and continue cooking for another 2-3 minutes until caramelized.
