Zesty Lemon Butter Cookies for Chinese New Year!

Lemon Butter Cookies are soft, buttery treats infused with fresh lemon juice and zest for a light, refreshing citrus flavor. With a tender, melt-in-your-mouth texture and lightly golden edges, these cookies are perfect for tea time, gifting, or everyday indulgence.

Serves: 25–30 pieces

Step:

1. Prep & Preheat
Preheat oven to 190°C (375°F). Line baking trays with parchment paper.

2. Zest with Ease
Using the Fukuro Adjustable Mandolin Slicer 8-in-1, finely zest the lemons. Set aside.

3. Mix Dry Ingredients
Measure flour, baking powder, baking soda and salt using the Fukuro Measuring Cup & Spoon Set. Whisk together with the Fukuro Stainless Steel Whisker.

4. Cream Butter & Sugar
In a large bowl, beat butter and sugar until light and fluffy. Whisk in egg, vanilla, lemon juice, and freshly sliced lemon zest until smooth and fragrant.

5. Combine
Gradually fold in dry ingredients using the whisker. Mix just until combined.

6. Shape & Bake
Scoop dough into balls and place on trays, spacing evenly. Bake for 10–12 minutes until edges are lightly golden.

7. Cool
Let cookies rest on the tray for 5 minutes, then transfer to a wire rack.

8. Optional
Dip or drizzle some lemon glaze on cooled cookies.
