Kamameshi: Traditional Japanese Rice Dish Made with Fukuro Cookware

Kamameshi is a beloved Japanese one-pot rice dish, packed with umami and cooked with various ingredients like vegetables, meat, and seafood. Traditionally cooked in a Kamado pot, you can easily recreate this dish at home with your Fukuro cookware for a flavorful, hearty meal.

Step:

1. Prepare the rice:

Wash the sushi rice thoroughly until the water runs clear. Let it drain for about 10 minutes.

2. Cook the chicken:

Use a Fukuro Pan or Pot heat the sesame oil over medium heat. Add the chicken pieces and cook until lightly browned and cooked through, about 5-7 minutes.

3. Prepare the vegetables:

Add the sliced shiitake mushrooms, carrots, and green beans to the pan, and stir-fry for another 3-4 minutes. Using kitchen tools like a spatula or wooden spoon will make the process smoother and prevent damage to your Fukuro non-stick frying pan.

4. Add the rice and sauce:

Stir in the rice and cook for 1-2 minutes, allowing the rice to absorb the flavors. In a separate bowl, combine the soy sauce, mirin, sake, and sugar. Pour the sauce over the rice mixture and stir well.

5. Add the dashi stock:

Pour the dashi stock (or water with dashi powder) into the pan, covering the rice and vegetables. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 20-25 minutes, until the rice is cooked and the liquid is absorbed.

6. Serve:

Once the rice is cooked, remove from heat and let it sit, covered, for 10 minutes. Garnish with chopped green onions and sesame seeds before serving.
